Decided to do chicken and pan fired potatoes in Nando's mild peri peri sauce. Thinking that thigh pieces probably weren't the best section of chicken to buy, bit fatty for my liking. But the potatoes turned out great.

Making pizza from scratch tonight. I use the recipe for beaver tails (Mike knows these are, right?) for the pizza dough and it is the best. I'm also going to try and make my own pizza sauce, but I have my doubts with how it will turn out.
also sesame chicken is my new favorite thing.

^ foodnetwork.com. The only crappy part is more often than not, the top recipes that come up are Paula Dean butter dishes. allrecipes.com is good, too.

Craig, all I do is just look at foodblogs on Tumblr. Especially the vegan blog I reblog all the time. I don't have a specific blog, but there's so many and that just gives me ideas.

I need some inspiration. craig! i know that i am a vegan and that is gross, but i also cook a shit-ton all the time and can share a few wonderful blogs with you. the PPK is my #1 place for getting recipes. Rice and lentil casserole.
A friend of mine made this for a group lunch deal a few weeks ago and I thought it was amazing. I figured I’d give it a shot tonight and it didn’t turn out too bad. The only issue I had was the fact a lot of the rice didn’t cook too well in the hour of cook time I had pulled from a recipe online. I figure next time I’ll either need more liquid, a longer cook time, or both.
I found two different recipes online and kind of combined them and altered them to my liking…
1 cup lentils 1 1/2 cups rice (brown, white, whatevs) 3 Italtian sausages, no casing, chopped up 1 onion 1 clove garlic 1-1 1/2 cups chicken broth 1/2-1 cup water salt pepper oregano parsley ground red pepper whatever cheese you want
Cook sausage in skillet with a little olive oil until cooked entirely. Dice up onion and mince garlic and add to skillet with sausage just to let them cook down a little.
Wash and rinse lentils and rice to remove excess starch.
Mix rice, lentils, sausage, and onions into casserole dish and try to spread everything evenly. Add chicken broth and water and make sure everything is even somewhat wet. Cover with foil and bake at 375 for approx. 1 hour. About five minutes before it’s supposed to come out, take off foil and cover with cheese. Let the cheese melt.
If you’re more of a veg person, it’s an easy fix without the sausage and switching to veggie stock.

^ that sounds very delicious! I'll have to make some and substitute the sausage with some field roast, mushroom, or homemade seitan.
Also, your problem is that you're not using enought liquid. You need AT LEAST twice as much liquid as you have rice. I suggest adding another cup of liquid to that recipe. So, you just put the rice into the recipe dry? I've never made a casserole that way. Interesting.

ALSO ALSO! I made seitan and sauerkraut runzas with horseradish sauce the other day and they're amazing. I love food. On the menu this next week is the amazing homemade pizza that I rule at making. My crust is thin and crunchy and my toppings are rad as balls. I'm also making Portobello Stroganoff. Did I mention I love food? I do.

Cooking all the healthy nomz. Sweet potato chips and fries, spicy grilled chicken, turkey taco stuff, hard boiled eggs...all getting ready for my work week. AAAH FOOD. Yum.
