hey so we all like food as is evident by our persistent consumption!
I like to cook a bunch and I guess I'm a professional baker or whatever so I figured it'd be nice to have a place to share recipes and experiences. right? I hope so.
oh also, vegan alert. actually, healthy vegan alert (so much worse, I know).
I've been living off of lentil stew lately and I swear to you it is the most delicious lentil stew you will ever encounter. all right, maybe not but wouldn't that be nice?
what's in it: 3 cloves of garlic - chopped finely half of a yellow onion - diced 2 green onions - sliced, ends timmed 3 small roma tomatoes - diced 5 or 6 crimini mushrooms - diced 1 pretty big gold yukon potato - peeled and chunked like 1/2 cup lentils (I like the green kind) almost a whole box of vegetable stock 2 sizeable pinches of cayenne kosher salt
all right so this is easy to assemble. sauté the garlic and onions and mushrooms in a bit of olive oil until the garlic is starting to brown. then pour in a bunch of veg stock and proceed to add the rest of the ingredients. The amount of liquid is up to you, but initially I like the stock level to be just above the rest of the stuff. Cover and turn down to simmer. let stand for about and hour, but you'll probably need to add more stock. it's done when the potatoes have lost the "crispness" of their original appearance.
about enough for two or one hungry person

I vegan-ified my beloved vodka sauce the other night. It didn't turn out too bad. I used soy creamer instead of heavy cream. My only complaint was that the soy creamer still isn't as thick as heavy cream so it's really runny, even after letting it simmer and stew for a long time. So I think next time I'll toss in some Tofutti Sour Cream. Other than that it was still pretty darn tasty.
I'm trying to be a part-time vegan (either eating a majority of my meals vegan every day, or a few days of the week being totally vegan. I haven't decided yet).

I love making enchiladas because they're super versatile. I'm an evil meat eater, so this recipe will have chicken in it, but I'm sure you can replace the ingredients with vegan friendly ones. This is the for dummies version.
1 large can refried beans 1 large can mild enchilada sauce 1 can corn 3 cans chicken, shredded (or chicken breast cooked and shredded) 1 1/2 blocks sharp cheddar cheese, shredded (or 1 large bag shredded sharp cheddar cheese) 10 flour tortillas, enchilada size 1 tomato, chopped 1 bag of shredded lettuce Sour Cream Salsa
Pour a thin layer of enchilada sauce into the bottom of a 9x13 pan (casserole size). I use a glass dish but it doesn't really matter. Mix together the corn, refried beans, and shredded chicken in a bowl. Take one tortilla at a time, pour a little enchilada sauce onto each one and spread it on the tortilla. Then put as much filling (the corn, bean, and chicken mixture) in as you'd like, roll it up, and place it folded side down into the pan. Repeat with all the tortillas or until the pan is full. Pour the left over enchilada sauce evenly over the top of the enchiladas, and top with cheese. Cover with aluminum foil and bake at 350 degrees Fahrenheit for 30 minutes.
Remove from oven and serve topped with chopped tomato, shredded lettuce, salsa, and sour cream.

I made three bean chili for dinner tonight. it was delicious. Again, a super simple recipe.
I doubled the recipe for five people, this is the "normal" recipe:
1 can black beans 1 can dark red kidney beans 1 can chili beans 1 can diced tomatoes 1 can of chipotle peppers in adobo sauce 1 tablespoon chili power 1 tablespoon cumin
Pour all the cans into a large chili pot (minus the can of peppers). Slice one of the chipotle peppers thinly, and drop it into the pot. Turn stove heat to high. When it boils, turn the heat to low/medium and add a teaspoon of adobo sauce (from the can of peppers) and the tablespoons of seasoning.
You can eat it right away of course, but I recommend letting it simmer for 15 minutes. It's a really good vegetarian option (vegan too, I think).
I ruin any veganness by topping mine with shredded cheddar cheese and daisy sour cream. Yum.

Heeeeey I love cooking. Now that I'm not working for a couple months all I do is sew, cook, and play with my cats. I make everything from scratch anymore (even my own bbq sauces, veganaise, dressings, etc) and although it takes up a good portion of time, I find the time because it makes everything 100x better. I'm on my phone at the moment so I don't want to take the time to write out a whole recipe, but I will soon! Last night we had homemade vegan sausages with kraut, barbecued veggies, and a green salad in a maple-mustard dressing. It was nomlicious.

also, i should give everyone here the healthy vegan alert too, but mostly because i hate having to write 'vegan' before every food i type out. lunch is pork and beans and leftover salad smothered in avocado. noooooomz!

I hate having to add the "vegan" or "vegetarian" modifier to everything I eat as well because I think it does make me sound like one of those pretentious douches that do it for attention (ex: OMG I just made yummy vegan cookies with vegan pudding and vegan vegan vegan and then talk about eating a giant steak ten minutes later).
But yeah, if you don't say it you get the "oh, but I thought you couldn't eat bbq chicken" or what have you.

Fuuuuck I made the best sandwich I've ever been blessed with. Bbq'd seitan, slaw, and white bean aioli. I think I'm just going to start praying to Isa Chandra Moskowitz. She is a vegan saint sent from heaven to give me amazing recipes.

YES I THOUGHT TUMBLR ATE IT BUT I FOUND IT.
What I call "that pasta dish"
Ingredients 1 pound cherry/grape tomotoes (whichever you can find), rinsed, dried, and cut in half 1/4 cup extra virgin olive oil and then some 4 cloves peeled garlic pinch of crushed red peppers (optional) handful of kosher/sea salt 1 pound of pasta (I prefere angel hair, but it’s up to you) 10 fresh basil leaves, shredded (spinach can be used, too) handful of parmasean cheese handful of little bits of mozzie cheese
Directions -Start by boiling water for your pasta. While the water’s going, this is when you can chop/peel your basil, garlic, tomatoes, and cheese (if you got a brick). While waiting, throw a pinch of the kosher/sea salt in with your sliced tomatoes. -Heat up a deep sautee pan with the 1/4 cup of olive oil, let that get nice and hot. Throw in your peeled, chopped garlic. Next, throw in your sliced tomatoes and let the juices of the tomatoes just leak out into the garlic and oil. -Once your pasta is to your liking, scoop it into the big pan (without the water, obviously) with your tomatoes and such. Mix it all together, making sure you get olive oil all over the the pasta. Toss your basil in and start mixing as well. You only really want to just barely wilt the basil, so don’t try drowning it in the olive oil. -Next, grab a big ole handful of parmasean and mozzie bits and throw it on the pasta. Mix it together until the cheese has melted. If the pasta looks dry at this point, you can either drizzle a little more olive oil on it or a couple spoonfuls of your starchy pasta water. -Lastly, EAT!!!
This is one of my favorite quick-meal things to make. If not for the amount of starch in the pasta, I'd eat it for every meal. Maybe I could, as long as I swim it off everyday.

This thread should just be called "lindsay's food journal" because uuuunnngh I made the best stew today. Black beans and vegetable stew topped with avocado was absolutely perfect and comforting for this rainy day situation. Stew on a rainy day is the best!

This thread should just be called "lindsay's food journal" because uuuunnngh I made the best stew today. Black beans and vegetable stew topped with avocado was absolutely perfect and comforting for this rainy day situation. Stew on a rainy day is the best! That sounds amazing. I love soups and stews. I especially love avocado. Recipe plz?
